The pluses of these specifications
- Clipped in protective atmosphere trays or as fresh produce (ice-filled polystyrene boxes)
- Water taken from streams or rivers which are classified Blue in the French Water Quality Assessment System (SEQ EAU) for aqua-cultural use, or classified 1A: very good quality stream or river.
- Low density to nurture the fishes' well-being: biomass lower than or equal to 35 kg/m³
- Organically-farmed food WITH NO ARTIFICIAL COLOURING
- A maximum of two medications per year and per batch: only as a curative measure
- Two authorised pest control sprays per year per batch
- No treatment 3 months before slaughtering
- Closed tanks to prevent any substitution during transportation
- Maximum density of 170 kg/m³
- Storage in a tank reserved exclusively for organic produce
- Slaughtering at the beginning of the day in order to avoid cross contamination between Organic Trout and Traditional Trout
